Tasting Notes
NOSE
Caramel and toasted vanilla. Stone fruit underneath, dried and quiet. Charred oak through the back. Steady, not loud.
PALATE
Brown sugar opens it. Peppered oak and rye spice through the middle. The warmth builds evenly and holds.
FINISH
Long. Honey over toasted grain. Smoke on the way out.
Neat, or over one large cube.

Ninety proof was a decision. We wanted a bourbon that comes through in a cocktail and still pours neat. For Batch No. 01, ninety is where we liked it. It’s a little hot on the first sip. Give it a minute.
